Rajma Masala This is a lightly spiced, creamy and a delicious punjabi rajma masala curry recipe. this is my mom's way of making this famous punjabi masala curry. rajma masala is a weekly affair at home and a sunday lunch. so i make rajma masala in three different ways. Red kidney beans soaked overnight and cooked in an onion tomato masala and a plethora of classic Indian spices till soft and mushy. While very few things can beat the fabulousness of rajma chawal, that is, the delicious rajma masala preparation with steamed rice, even rotis and breads do complete justice to this vegetarian Indian recipe. You can cook Rajma Masala using 15 ingredients and 1 steps. Here is how you cook that.

Ingredients of Rajma Masala

  1. Prepare 2 cups of rajma.
  2. It's 2 tablespoons of oil.
  3. Prepare 1 tsp of cumin seeds.
  4. You need 2 of bay leaves.
  5. It's 2 of onion, finely chopped.
  6. You need 1 tablespoons of ginger-garlic paste.
  7. It's 2 tbsp of tomatoe puree.
  8. It's 1 tsp of turmeric powder.
  9. It's 1/2 teaspoon of cumin powder.
  10. It's 1/2 teaspoon of coriander powder.
  11. You need 1 teaspoon of red chili powder.
  12. Prepare to taste of salt,.
  13. You need 2 tbsp of heavy whipping cream.
  14. Prepare 2 tablespoons of coriander leaves, chopped.
  15. Prepare 1 teaspoon of garam masala.

Rajma curry is basically made using raw kidney beans which are soaked and then cooked with onions, tomatoes and a special blend of spices called "rajma masala powder". This spice blend has a lot of spices in it like dry mango, nutmeg, coriander, pomegranate seeds, cinnamon, ginger, cumin, cardamom, mace etc. Rajma Masala or Red Kidney Beans Curry is a dish prepared from boiled beans simmered in a creamy, rich onion tomato based gravy. It also has some everyday spices which add a lot of flavor to the tomato-onion base of this curry.

Rajma Masala instructions

  1. In a pressure cooker add the rajma, 2 cups water, turmeric, salt. Stir and cook on high for 1-2 whistle. Check if rajma is soft. Heat oil in a pan,once the oil is hot add cumin seeds. Saute for a minute. Add onions and cook for few minutes till light brown.next add bay leaves to it. Add ginger-garlic paste and cook till raw smell goes away. This will take 3-4 minutes. Once the ginger-garlic is done, add the fresh tomato puree and mix. Cover the pan and let it cook for 10 minutes on medium hea.

Don't forget to add fresh coriander leaves at the end, it adds a beautiful color and freshness to the curry.. the rajma recipe is straight forward to cook, yet some tips, suggestions and variations to make perfect rajma masala. firstly, i heavily recommend soaking the rajma overnight before pressure cooking till it softens. you can hasten the cooking procedure by using canned kidney beans but would not recommend it for the obvious reasons. secondly, there are different types of rajma seeds available . Rajma Masala recipe is a classic dish in North India and from there it slowly spread to other parts of the country too. It is famous in Punjab, Himachal Pradesh and Orissa. Rajma Masala is a typical Punjabi style recipe that I have been trying to improvize on since years. Having tasted it at quite a few Punjabi friends homes (read school/college friends), langar at gurudwara as well as the roadside Punjabi dhabas, I try my best to replicate the same flavor at home.
