  1. Prepare 400 g of The Meatless Farm's Meat Free Mince.
  2. It's 1 cup of chopped onion.
  3. You need 1.5 cups of sliced peppers.
  4. It's 1 tsp of garlic paste.
  5. Prepare 1 of heaped tsp ground coriander.
  6. Prepare 1 of heaped tsp cumin.
  7. Prepare 1 tsp of oregano.
  8. You need cube of Kallo veg stock.
  9. You need 2 tbsp of tomato paste.
  10. Prepare 390 g of chopped tomatoes (I use cartons over cans).
  11. Prepare 1 can of red kidney beans (drained and rinsed).
  12. Prepare 1 can of black eye beans (drained and rinsed).
  13. You need 1/2 tsp of chipotle paste.
  14. You need of Salt and pepper.
  15. Prepare of Extras - to serve.
  16. You need of Tortilla wraps.
  17. It's of Nachos.
  18. Prepare of Guacamole.
  19. You need of Veganaise.
  20. It's of Jalapenos.
  21. You need of Rice.

Sprinkle with a pinch each of cayenne, cumin, cinnamon, sea salt and black pepper, drizzle with oil then toss to coat. Put a heavy bottomed pan on a low heat to warm up. Prepare all your veg, chop the onion, mushrooms, leeks, red peppers into bite size bits. There was once a time when I was afraid of being vegetarian.

Vegan Chilli (sin carne!) instructions

  1. Fry your meat free mince according to packet and set aside.
  2. Fry onions, peppers and garlic until liquid is released and evaporated.
  3. Add coriander, cumin and oregano to the pan, crumble in stock cube, and cook for a minute.
  4. Add mince back to pan and stir until it is all incorporated.
  5. Add tomatoes and tomato paste to the meat and veg mixture, then add cold water to the empty carton (I used around half a carton) to get all the tomato-y goodness out!.
  6. Bring back to a simmer before adding the beans and the chipotle paste.
  7. Bring back to a simmer and add salt and pepper to taste.
  8. Simmer for about 10 minutes.
  9. Serve with your favourite accompaniments! We made wraps out of ours with veganaise, my easy guacamole, shredded violife cheese and crumbled nachos.

No more grilled bacon, no more crispy chicken wings, no more melt-off-the-bone ribs. But bollocks to that - of course that was silly, and things have changed now. Definitely in part thanks to meals like this meatless chili. I often found meals that were heavily meaty a bit hard to just cut the meat out of.
