- mix the first 4 ingredients until well blended. freeze 4 hours until almost solid..
- beat cream cheese mixture until creamy then add berries and powdered sugar. when berries are mixed well add graham cracker crumbs (can use vanilla wafers). FREEZE OVERNIGHT!!!.
- let sit out at room tempature for about 10-15 minutes. can scoop out like ice cream. GREAT FOR SUMMERTIME BBQ'S.....
Sooooo good & couldn't be easier. I had mascarpone cheese & frozen raspberries as that was what I had on hand. This ice cream recipe is perfect in that it doesn't use a machine. Not everyone owns an ice cream maker so this is one that everyone can make. I love the bits of graham crackers and raspberries through out it all.
